Did you know that water vapor is invisible and actually lighter than dry air? What separates a tropical storm from a winter blizzard? And what exactly is El Niño? Elliot Rappaport, a professional captain of traditional sailing ships, has spent three decades at sea, where understanding weather is crucial to the safety of vessels and their crews. Here he offers a sailor’s-eye view of the moving parts of our atmosphere and unveils the larger patterns it holds: global winds, storms, air masses, jet streams, and the longer arc of our climate.

Told through a series of tall ship voyages, Rappaport’s narrative takes readers from the icy seas of Greenland to the Roaring Forties, places where one can experience all four seasons in an hour. He navigates the turbulent waters of the Strait of Gibraltar, en route to storied port cities of the Mediterranean. In the vast tropical Pacific he crosses the equator, where heat, moisture, and unsettled winds churn out powerful squalls, and drops anchor in isolated ports of call. He explores wide swathes of ocean to explain how the trade winds have carried ships westward for centuries, and how ancient Polynesian explorers pushed back the other way, leveraging their mastery of waves and weather to achieve what may be humanity’s greatest navigational achievement.

by Elliot Rappaport
323 pp., Hardcover
6 1/4" x 9 1/2"

by Randall Peffer. Cost: about $6 for a quart of paint – and 10 minutes' work.

Woodworker Nick Kroll spent two years formulating and testing his recipe for fresh milk paint, which is based on historical recipes for casein paints – plus a little modern ingenuity. The paint goes on like an acrylic and dries fast – you can put on four coats in a day with no problem. Once dry, the paint has a low luster and hardens to become incredibly durable. You can then leave the paint as-is or topcoat it with wax, oil or whatever you prefer.

Most of all, you can make paint in any color you want with inexpensive powdered artist pigments. Take a deep red from the soil in Ercolano, Italy, where Pompeii is located. Use a sage green from France. One of the many ochres that color our world. Or select one of the many synthetic pigments that create colors not found in nature. All these pigments can be mixed to create any color of paint.

In the 100-page pocket book, Nick show you how to make the paint using kitchen equipment (a blender, household sauce pot and a strainer). The paint is made with a base of fresh quark – a protein-loaded cheese you can buy in many stores. If you can’t find quark, you can make it easily using skim milk and vinegar. Mix water, a little hydrated lime, the quark and your pigment, and you have paint that is ready to go.

Since we started editing “Make Fresh Milk Paint,” we’ve made dozens of batches of the paint using Nick’s recipe and are amazed and impressed with the results.
